Ingredients

Ingredients
  • 1.5 pounds boneless skinless chicken breast fully thawed, similar thickness
  • 1 tablespoon olive oil
  • 1 medium onion diced
  • 3 cloves garlic minced
  • 2 15-ounce cans white beans drained and rinsed
  • 1 4-ounce can diced green chiles
  • 1 cup corn
  • 4 cups low-sodium chicken broth
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 0.5 teaspoon smoked paprika
  • 0.5 teaspoon chili powder
  • 4 ounces cream cheese softened and cubed
  • 1 tablespoon lime juice
  • salt and black pepper to taste

Equipment

  • 1 Large heavy pot
  • 1 Food thermometer

Method

  1. Heat oil in a large pot over medium heat. Cook onion for about 5 minutes until softened. Stir in garlic, cumin, oregano, paprika and chili powder for 30 seconds.
White Chicken Chili: Sauté onion and spices
  2. Add thawed chicken, beans, green chiles, corn and broth. Bring to a gentle simmer. Cover partially and simmer about 20–25 minutes, or until the thickest part of every breast reaches 165°F (74°C). Thicker pieces may need longer.
White Chicken Chili: Simmer the chicken
  3. Transfer cooked chicken to a clean plate and shred with two forks. Return it to the pot. Mash about 1 cup of the beans against the side to thicken if desired.
White Chicken Chili: Shred and thicken
  4. Reduce heat to low. Stir in softened cubed cream cheese until fully blended, about 3–5 minutes. Add lime juice, taste and season. Serve hot; optional toppings are not included in nutrition.
