Prep Time 5 minutes
Cook Time 15 minutes
Cooling 20 minutes
Total Time 40 minutes
Servings: 20 tablespoons

Ingredients

  • 1 large very ripe banana about 115 g peeled
  • 3/4 cup packed light brown sugar 150 g
  • 1 cup water 240 ml
  • 1 tsp vanilla extract
  • 1/4 tsp ground cinnamon
  • 1/8 tsp fine salt
  • 1 tsp fresh lemon juice

Method

  1. Peel the banana and cut into 1/2-inch slices.
  2. Combine banana, brown sugar and water in a small saucepan. Heat to a gentle simmer.
  3. Reduce heat to medium-low, add cinnamon and salt, and simmer uncovered for 12 to 15 minutes, stirring occasionally.
  4. Lightly press the banana pieces during the final 3 minutes; do not puree.
  5. Remove from heat, stir in vanilla and lemon juice, and rest for 5 minutes.
  6. Strain through a fine-mesh sieve without forcing pulp through.
  7. Cool for about 20 minutes, then transfer to a clean covered jar and refrigerate.

Notes

Yield is approximately 1 1/4 cups after straining. Actual yield varies with banana size and evaporation. Serving size: 1 tablespoon.
